AM:PM Bohemian Restaurant and Cabaret Supper Club – Belfast’s premiere destination for quality food and award winning live entertainment – is pleased to announce that Chef Brian Donnelly has joined the business as Consultant Executive Chef.
Formerly of James Street South Cookery School, and worked for Gordon Ramsey, Michel Roux, Jr. and Gary Rhodes in London. At 20, Brian was head chef of Thornton’s in Dublin when it got its second Michelin star. Chef Brian will work closely with AM:PM management and kitchen staff to overhaul the restaurant’s existing food offering to reflect the unique style of the venue and provide customers with a wide array of delicious items — from small plates to a bespoke AM:PM burger. “
AM:PM has long provided Belfast residents and visitors with a great night out and overall food and drink experience,” Brian said. “It’s exciting to work with such a customer-focused group and together develop different menus that will suit a wide range of tastes.” The AM:PM venue includes a 1920’s style Supper Club, reminiscent of bygone era offering a wide variety of entertainment ranging from live jazz, burlesque, contortionists, magicians, comedians, bands even famous local artists, while you enjoy a sumptuous meal served by your very own Cabaret butler. The Treehouse – is Irelands only roof top restaurant with retractable roof and the main AM:PM restaurant downstairs.
Brian has tailored menus to suit the mood of each room. “The Treehouse is a fun cocktail environment so small, internationally-inspired plates work well,” he said. “In the main restaurant the mood is very French so we took our inspiration from the brasserie.”
AM:PM’s General Manager Eugene Blagoci welcomed Brian aboard. “With Belfast’s increasing international profile as a place to visit and enjoy night life, it was important that AM:PM stay on top of the high standards more and more people have nowadays. Culinary excellence is part and parcel of what Belfast offers – and we want to give our customers the full experience.”
