£500k investment and 25 jobs for Belfast’s newest Mediterranean eatery 44 Hill Street

Building on the success of his Lisburn Road restaurant La Bastille Guillaume Rabillat has changed his course for a Mediterranean-inspired eatery, launching tapas-inspired style eatery 44.

Located on Hill Street in Belfast’s thriving Cathedral Quarter area, 44 will serve up casual Mediterranean-influenced cuisine paired with a wide-ranging wine list including bottles from across France, Spain and Italy.

The concept behind 44 is working toward Rabillat’s mission to help change the perception of fine dining, making great food fun and approachable to all ages and backgrounds, but still maintaining high quality food and drinks. Discussing his latest addition to the ever – growing Northern Ireland restaurant scene Guillaume said, “I am delighted to bring a delicious Mediterranean, tapas-style restaurant to the heart of Cathedral Quarter. The opening of 44 will create 25 new jobs within the hospitality sector and shows my continued commitment to Northern Ireland’s dining landscape. My team has developed significant fine dining experience in Belfast over the past 20 years producing high-quality food for diners from across Northern Ireland. I am very excited to welcome everyone to my newest Mediterranean adventure.”

Guillaume continued, “44 will offer diners a complete fine dining experience, but without the stuffy, formal stereotypes. Our urban-style Mediterranean-influenced menu items will offer something special to suit all tastes and occasions, making the new restaurant not only the perfect location for a special meal with friends or family but also a great venue for a casual lunch or business dinner.”

Born and raised in France, Guillaume has a wealth of knowledge in Mediterranean flavours and has dedicated his hospitality career to continuing this education, working in Paris, London, the Republic of Ireland and Belfast. During the last 20 years, Guillaume has quickly become a recognisable and well-respected figure in Northern Ireland’s hospitality sector and hopes to grow his reputation further through the success of 44.

Assembling a team of kitchen and front-of-house from a wide range of fine dining institutions from across Northern Ireland and further afield, Guillaume’s kitchen staff will be led by Head Chef Pierre Caulet, formerly of popular Belfast eatery, Coppi. Discussing his role at 44 Hill Street, Pierre said, “Cheffing takes a lot of dedication – it’s a way of life, not a job, and Guillaume’s dedication to the industry shows his long-term investment in the culinary world. I couldn’t be happier to working alongside Guillaume to bring his vision of ‘Belfast on the Med’ to life through vibrant food and exquisite pairings with our extensive wine and cocktail list.”

44 offers seasonal Mediterranean menus, fine wines, beers and cocktails and seats up to 90 diners as well as 15- 20 at the bar.
