STIX AND STONES TWINS LIGHT A FLAME AT MCENANEYS


A pair of twins are bringing their famed flames to a new eatery in West Belfast when Stix and Stones pops up on the menu later this month.

The Diggers Restaurant at McEnaneys will, from 31st January, play host to the Stix & Stones brand with its famed reputation for steak on a stone.

Stix and Stones opened to critical acclaim in Belfast City Centre in 2014 opening an additional restaurant within the Balmoral Hotel complex in 2017 and have attracted a loyal following including a cameo appearance in BBC hit drama Line of Duty.

Twenty-nine-year-old twins, chef Vincent and pastry chef Vivien Gault, who have helped established Stix and Stones as the holy grail for steak lovers are the duo who will be behind the grills offering cult classics to the customers of McEnaneys.

The twins went to La Salle and St Genevieve’s, neighbouring schools in their local area. Vincent worked in kitchens since the age of 15 learning the trade and although he has achieved a joint honors degree and a post grad diploma in Irish history and politics it was his love for food and watching cookery programmes on TV that inspired him to continue honing his skills in the restaurant business..

Stix and StonesVincent said, ‘Steak isn’t a meal, it’s an institution. Cooking on hot rocks or stone is one of the oldest methods of cooking and adds a fun sharing element to a dining experience. We use a special cooking technique before serving our meat which helps keep every mouthful tender and succulent’.

Vivien studied pastry and confectionary at Belfast Met and knew her passion was for pastry as she’s an avid viewer of television programmes Ace of Cakes and The Great British Bake Off. Four years ago, Vincent started working at Stix and Stones in Belfast City Centre with Vivien following just two weeks later. In total, the twins have been working side by side for 14 years.

Vivien said, ‘Of course, we’ve had a few issues working alongside one another, we’re twins but we’re passionate. We’re independent thinkers – but first and foremost, we’re family.

‘I couldn’t pass up the opportunity to work with my best friend in the area I grew up in. I can’t imagine working with anyone else.”

Diners will be invited to cook their choice of steak on hot stones – with advice and encouragement from chefs and staff.

On the sweeter side of things Vivien has excited diners with her showstopper of Baked Alaska bringing together cold ice cream and berries with a contrasting warm meringue and white chocolate.
