Local Belfast brothers David and Andrew Maxwell have purchased the much loved Mexican burrito brand Boojum.
Boojum operates five Mexican burrito bars and has built a strong reputation as the number one burrito brand in all of Ireland. Boojum was founded in 2007 by John and Karen Blisard, and has grown to become the largest Mexican fast casual chain in Ireland, with restaurants in Dublin, Belfast and Galway and serves up award winning burritos, tacos, salads and rice bowls to thousands of customers every day.

The purchase of Boojum is the pinnacle of a combined 30 years in the UK and US restaurant industry for brothers David and Andrew. “I was privileged to spend 11 unbelievable years as part of my restaurant career in Arizona, where I fell in love with Mexican food and culture,” said David. “Andrew joined me in 2008 after a successful career at Ulster Rugby. We both feel a huge amount of synergy with Boojum, and when the opportunity arose we felt it was right for us and our families.” David Maxwell is looking forward to working with the talented team at Boojum.
