The Warren Collection, a hotel group proudly founded in Belfast and now expanding internationally, recently brought a flavour of its hometown to Malta with a special visit from two of Northern Ireland’s most talented bartenders at Eleven by Warren Collection, its stylish hotel in Sliema.
Emily Doherty and Jack Weir, well-known faces on Belfast’s cocktail scene, took over the rooftop bar at Eleven for one afternoon — shaking up an exciting selection of drinks, blending bold flavours, creative presentation, and their signature energy.
Emily, a multi-award-winning bartender known for her innovative serves, teamed up with Jack, recognised for his passion and creativity behind the bar. Their visit reflects Warren Collection’s commitment to creating memorable guest experiences and celebrating emerging talent across its locations.

The visit also celebrated the launch of Eleven’s new cocktail menu, entirely inspired by Malta’s iconic locations, vibrant coastline, and rich culture. Each cocktail captures a taste of the island’s colours, moods, and stories — a true celebration of Malta in every glass.
Signature creations include:
Sunset at Sliema – Bright, citrusy and bubbly, just like a sunset stroll along Sliema’s promenade
Golden Bay Glow – Tropical and creamy with a zesty twist, inspired by a lazy beach day at Golden Bay
Festa Frawli – Sweet, bold and bittersweet — a nod to Malta’s beloved strawberry festival in Mgarr
The Silent City – Light, refreshing, with a herbal whisper — inspired by the calm of Mdina at golden hour
Eleven Cooler – Cool, crisp and subtly exotic — a fresh breeze from the rooftop
Valletta Spritz – Zesty and effervescent with a sweet island twist — sunshine in every sip
These house specials sit alongside much-loved classics like the Espresso Martini, Margarita, Strawberry Daiquiri, Aperol Spritz, and Mojito.
